Italian Lemon Chicken

This recipe called for Thyme, but I did not have any, so I used the Italian Seasoning. We loved it and best of all, it is really healthy!

3 Tablespoons Flour
1/2 teaspoon salt
1/4 teaspoon pepper
4 chicken breasts
2 teaspoons olive oil
1 medium onion, chopped
1 tablespoon butter
1/2 teaspoon Italian seasoning
1 cup chicken broth
1 tablespoons lemon juice

In a bowl, combine flour, salt and pepper. Save 4 1/2 teaspoons for sauce. Sprinkle remaining flour over chicken. Spray a large pan with Pam, then cook chicken in olive oil on medium for 7-9 minutes per side till cooked. Remove from pan and keep warm.

Saute onion in butter until tender. Add Italian seasoning and remaining flour, stir until blended. Stir in broth and lemon juice and scrape up any pan drippings. Bring to a boil. Cook until thick.

Serve sauce over chicken.
